Illinois Central College

Culinary Institute

The existing culinary program at Illinois Central College had previously been offered within a single institutional production kitchen designed over 40 years ago. Due to the tremendous success of the program and associated enrollment growth, the college decided to renovate and expand their existing facilities to better accommodate their growing program needs.

As a result of our team’s programming efforts with the college, the following space needs were identified:

  • Two (2) Production Kitchens
  • Bakery/Pastry Kitchen
  • Butcher Shop
  • Culinary Classroom
  • Community Dining Room
  • Kitchen Theater Space
  • Support Space
  • Faculty Offices
  • Student Life Space

Due to the existing space limitations, the goal of the design was to create as much flexibility and dual-use space as possible.  Much of this was achieved through use of movable equipment and the incorporation of state-of-the-art audio-video systems.

The overall design of the new Culinary Institute also incorporates full-height glass walls throughout in order to create an open, transparent environment and showcase the program to the rest of the campus and to the community.
